The Indian Council of Agricultural Research (ICAR) has developed a new purple potato, which contains several times more antioxidants, vitamin C, potassium, and fiber than the regular potato, providing farmers with a new source of income and health benefits to consumers.

Indian Council of Agricultural Research (ICAR) through its National Institute for Agricultural Research (NIAR) has recently developed a new purple potato variety, slated to be marketed under the name “Rajat‑Ber.” This variety contains two to three times more anthocyanin, vitamin C, potassium, iron, and fiber than ordinary white or red potatoes. Scientists note that anthocyanin is a potent antioxidant that may help reduce the risk of heart disease, cancer, and diabetes. Additionally, the high fiber content keeps the digestive system healthy and stabilises blood‑sugar levels, making it a suitable option for people prone to diabetes.

The new variety also offers several benefits to the farming community. Its growing period is similar to that of conventional potatoes, but its greater disease resistance reduces the need for chemical pesticides, thereby lowering production costs. Early trials show that yields can reach 30–35 tonnes per acre, surpassing those of currently popular varieties. Moreover, its distinctive purple colour gives it a unique market identity, boosting export prospects.

Demand for this purple potato is likely to rise rapidly among health‑conscious consumers. Several major retail chains and food‑processing companies plan to add the new variety to their product portfolios. The government has also expressed intent to encourage the development of such nutrient‑rich crops by offering subsidies and technical assistance, thereby strengthening India’s food security and nutrition.
